Ingredients

  • 1 kg of beef (rump or sirloin)
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • 1 glass of red wine
  • Fresh rosemary
  • Garlic (1 or 2 cloves)
  • Meat or vegetable broth

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Tie the meat with kitchen twine to maintain its shape during cooking.
  3. In a large skillet that can contain the piece of beef, heat a drizzle of extra virgin olive oil and add the crushed garlic.
  4. Brown the meat on all sides until a nice golden crust is obtained. This step is crucial to seal the juices inside.
  5. Season the meat with salt and pepper to your liking and add sprigs of rosemary.
  6. Deglaze with the glass of red wine and let the alcohol evaporate for a few minutes.
  7. Transfer the meat and cooking juices to a baking dish, add some meat or vegetable broth without completely covering the meat.
  8. Place the roast in the oven and let it cook for about 1 hour and 30 minutes, basting it occasionally with its cooking juices to prevent it from drying out. The exact time depends on the desired degree of doneness: pink inside or well done.
  9. Once cooked, let the roast rest for about 10 minutes before cutting it, so that the juices are evenly distributed.
