BBQ Tomino with Grilled Vegetables and Mustard

Here is the recipe to prepare delicious BBQ Tomini with grilled vegetables and mustard, with an Italian twist.

Ingredients

  • 4 tomini (fresh and soft cheeses typical of Piedmont)
  • 2 zucchini
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 eggplant
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Good quality mustard
  • Aromatic herbs of your choice (thyme, rosemary, oregano)

Preparation

  1. Start by washing and cutting the vegetables. Slice the zucchini and eggplant into approximately 1 cm thick rounds. Cut the bell peppers in half, remove the seeds, and cut them into wide strips.

  2. Heat the BBQ to medium-high temperature. Meanwhile, brush the vegetables with extra virgin olive oil and season with salt, pepper, and chopped aromatic herbs.

  3. Once the BBQ is ready, grill the vegetables to give them a light charring to intensify their flavor. Turn them occasionally, until they are cooked through and nicely browned.

  4. While the vegetables are cooking, prepare the tomini for the BBQ. Brush each tomino with a bit of oil and place them on the grill.

  5. Cook the tomini for about 3-4 minutes per side, until the surface becomes slightly golden and the inside is soft.

  6. Serve the tomini warm, accompanied by the grilled vegetables and a drizzle of mustard on the side, so everyone can season to their liking.
