Scamorza skewers on the BBQ
17/11/2023Scamorza cheese skewers on the barbecue are a tasty appetizer that’s simple to prepare and perfect for a summer barbecue.
Ingredients
- 500 g of scamorza cheese (preferably smoked, for a more intense flavor)
- 2 bell peppers (red and yellow for a nice contrast of colors)
- 1 onion
- Extra virgin olive oil
- Salt and pepper to taste
- Aromatic herbs to taste (such as oregano or rosemary)
- Toothpicks or long skewers
Preparation
- Begin by cutting the smoked scamorza into cubes of about 2-3 cm on each side.
- Wash and clean the bell peppers, removing the seeds and the white inner parts, then cut them into pieces similar in size to the scamorza.
- Peel the onion and divide it into wedges or petals that won’t fall apart too easily.
- Thread the pieces of scamorza, pepper, and onion onto the skewers alternately, leaving a bit of space between each piece to allow for even cooking.
- Preheat the barbecue to a medium temperature and, while it is heating, brush the skewers with a drizzle of extra virgin olive oil and season them with salt, pepper, and the aromatic herbs you have chosen.
- Place the skewers on the hot grill and let them cook for about 5-6 minutes per side until the scamorza starts to turn golden and slightly melted.
- Once cooked, remove the skewers from the grill and serve immediately, perhaps accompanied by some crunchy bread.
If you do not have a barbecue, you can also cook them on a stove-top grill or in an oven with a grill function, adjusting the cooking time according to the power of your appliance.
