Ingredients
- Salmon fillets (150-200 g per serving)
- Extra virgin olive oil
- Fine salt and black pepper
- Aromatic herbs (rosemary, thyme), finely chopped
- 1 lemon (juice and grated zest)
- 1 clove of garlic
Preparation
- Prepare the salmon by cleaning it and patting it dry with kitchen paper. If the skin is still on, you can leave it; it will help keep the fish juicy during cooking.
- Rub the salmon fillets with a little bit of oil, then season them with salt, pepper, chopped aromatic herbs, and grated lemon zest.
- In a bowl, mix the lemon juice with a crushed garlic clove and a bit of extra virgin olive oil, then brush this marinade onto the salmon.
- Heat the BBQ to a medium-high temperature. If you have a thermometer, try to reach 200-220 °C.
- Lightly oil the BBQ grill to prevent the salmon from sticking.
- Place the salmon fillets on the grill, skin-side down if present.
- Close the BBQ lid and cook for about 5-7 minutes, depending on the thickness of the fillets. Do not turn the salmon; the skin will become crispy and the fish will cook evenly thanks to the lid.
- Check for doneness; the salmon is ready when it flakes easily with a fork but is still moist inside.
- Serve immediately, possibly accompanied by lemon slices and a fresh salad or grilled vegetables.
Notes:
If you do not have a BBQ, you can use a stovetop grill or a well-heated non-stick pan to achieve a similar result, although naturally, the characteristic smoky flavor will be less pronounced.
