Peach and Lime Bavarian Cream
17/11/2023I can guide you through the preparation of a delicious Peach and Lime Bavarian Cream, a creamy and refreshing dessert perfect for the summer season. Here is how to proceed:
Ingredients
- 250 g of fresh peaches (or canned if not in season)
- 2 limes (both juice and grated zest)
- 3 sheets of gelatin (or 6 g of gelatin powder)
- 100 g of granulated sugar
- 250 ml of whole milk
- 3 egg yolks
- 200 ml of fresh cream to whip
Preparation
- Start by hydrating the gelatin sheets in cold water for about 10 minutes, or prepare the gelatin powder following the package instructions.
- While the gelatin is soaking, chop the peaches, put them in a small pot with a tablespoon of sugar and the grated zest of one lime. Cook over low heat until the peaches have softened and released their juice.
- Blend the peaches with their juice and strain to obtain a smooth mixture. Gently heat the peach puree in a pot and dissolve the well-squeezed gelatin inside (or add the rehydrated gelatin according to the manufacturer’s instructions). Stir until fully absorbed and let cool.
- Bring the milk to a boil in another pot. In a bowl, beat the egg yolks with the remaining sugar until light and foamy. Add the hot milk to the yolks, stirring constantly. Transfer everything back into the pot and cook over low heat, stirring continuously, until the mixture thickens and reaches the consistency of an English cream.
- Remove the mixture from heat and add the juice of the two limes. Combine the peach puree with the cream and gently mix until you have a uniform mixture.
- In a separate bowl, whip the fresh cream until it becomes soft and foamy. Gently fold it into the peach and lime mixture, trying not to deflate it.
- Pour the Bavarian Cream into individual molds or a loaf pan. Cover with cling film and cool in the refrigerator for at least 4-6 hours, preferably overnight, until the Bavarian Cream has set.
- To serve, quickly pass the molds under hot water and unmold the Bavarian Cream onto a serving dish. Decorate as desired with slices of peach or lime, or with a dusting of powdered sugar.
Curiosity
The Bavarian Cream is a spoon dessert of French origin, despite what its name might suggest. It consists of a cream enriched with whipped cream and thickened with gelatin, served cold, and is very versatile as it can be flavored and colored in various ways. In our case, we added a touch of summer freshness with seasonal fruit and citrus.
