Zucchini in Batter

Zucchini in batter is a delicious and crispy appetizer or side dish that’s perfect for various types of menus. Here’s how to prepare them.

Ingredients

  • 2 medium zucchini
  • 100 g of flour
  • 1 egg
  • About 100 ml of sparkling water (or beer for a different flavor)
  • Salt to taste
  • Black pepper to taste (optional)
  • Seed oil for frying

Preparation

  1. Wash the zucchini and cut them into about 5 mm thick slices, or into long strips if preferred. Lightly salt them and set aside.

  2. Prepare the batter in a bowl: pour in the flour and add a pinch of salt. Break in the egg and start mixing.

  3. Slowly add the sparkling water (or beer) while mixing until you get a smooth and semi-liquid batter. If you want, add a pinch of ground black pepper. The batter should stick to the fork but slide off easily.

  4. Heat the oil in a large pan or a deep fryer to 170-180 °C.

  5. Dip the zucchini slices or strips into the batter, making sure they are well covered.

  6. Fry the battered zucchini in hot oil until golden brown and crispy. Do not overcrowd the pan; fry a few zucchinis at a time.

  7. Drain the fried zucchini on paper towels to remove excess oil.

  8. Serve hot as an appetizer or side dish.

Battered zucchini is also excellent with a sprinkle of grated Parmesan cheese on top while still hot, or you can serve with an aioli or tomato sauce for an extra touch of flavor.

Trivia

If you want an even lighter version, you can bake the zucchini in batter in the oven on a baking sheet covered with parchment paper and lightly greased, cooking them at 200 °C until the desired golden color is achieved. The result will not be as crispy as frying, but it will still be very tasty.
