Batter-fried Broccoli

Ingredients

  • 1 broccoli
  • 200 g of flour
  • 250 ml of sparkling water (very cold)
  • Salt to taste
  • Pepper to taste (optional)
  • Oil for frying

Preparation

  1. Clean the broccoli by cutting it into florets, then wash and dry them well.
  2. In a large bowl, sift the flour and slowly add the sparkling water, stirring with a whisk to avoid lumps. The batter should not be too runny so that it adheres well to the broccoli.
  3. Season with salt and, if you like, add a pinch of pepper for more flavor.
  4. Dip each broccoli floret into the batter to coat it completely.
  5. Heat plenty of oil in a pan. You can check if it’s at the ideal temperature for frying when a bit of the batter dropped into the oil immediately comes to the surface, frying.
  6. Fry the batter-coated broccoli florets in the hot oil until they are golden and crispy. Do this in small batches at a time to not lower the oil temperature too much.
  7. Remove them with a slotted spoon and transfer to paper towels to drain the excess oil.
  8. Serve the batter-fried broccoli hot to enjoy their best crispy texture.
