Parmesan Baskets with Shrimp and Avocado

Ingredients
- 12 fresh or frozen shrimp
- 2 ripe avocados
- 1 lemon
- 4 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Mixed salad to accompany
- 12 parmesan crisps (to prepare or buy ready-made)
- 1 clove of garlic
- Chopped parsley
Preparation
- Start with the shrimp. If they are fresh, clean them by removing the head, shell and intestine. If they are frozen, make sure they are fully thawed before using them.
- Boil the shrimp in lightly salted boiling water for 2-3 minutes, then drain and let them cool.
- In the meantime, prepare the parmesan crisps. If you don’t have them ready, heat a non-stick pan and sprinkle with a bit of grated parmesan, forming a small circle. Allow it to melt until it becomes crispy, then lift with a spatula and place it on an upside-down glass or cup to shape it into a basket. Let it cool in this position.
- Now move on to the avocado. Cut it in half, remove the pit and peel, then cut the flesh into cubes. Drizzle with lemon juice to prevent the avocado from browning.
- In a bowl, combine avocado cubes with the cooled shrimp, add the finely chopped garlic clove, some chopped parsley, salt, pepper, and extra virgin olive oil. Mix gently.
- Arrange a little mixed salad at the bottom of each parmesan basket, then fill with the shrimp and avocado mix.
- Serve immediately to prevent the parmesan basket from getting soggy.
