Preparation
- Dissolve the yeast in the lukewarm water and let it activate for a few minutes.

- Knead vigorously until you obtain a smooth and elastic dough. If necessary, add a little flour or water to achieve the desired consistency.
- Cover the dough with a damp cloth and let it rise in a warm place away from drafts for about 2 hours or until it doubles in volume.
- Once risen, roll out the dough on a lightly floured surface until it is about 3-4 mm thick.
- Use a round pastry cutter to cut out discs of dough.
- Place the discs on a baking tray lined with parchment paper, leaving some space between them.
- Top each disc with a spoonful of tomato sauce, a sprinkle of oregano, a pinch of salt, and chopped mozzarella.
- Let the mini pizzas rise again for another 20 minutes while you preheat the oven to 220 °C.
- Bake the mini pizzas for 10-15 minutes or until the edges turn golden brown and the mozzarella has melted and lightly browned.
- Before serving, drizzle some raw extra virgin olive oil over each mini pizza.
