Bar-style Mini Pizzas

Ingredients

  • 500 g of type 00 flour
  • 250 ml of lukewarm water
  • 25 g of fresh yeast or 7 g of dry yeast
  • 10 g of salt
  • 1 tablespoon of extra virgin olive oil
  • Tomato sauce to taste
  • Chopped mozzarella to taste
  • Oregano to taste
  • Salt to taste
  • Extra virgin olive oil to taste for dressing

Preparation

  1. Dissolve the yeast in the lukewarm water and let it activate for a few minutes.
  2. In a large bowl, pour the flour and add the dissolved yeast, a tablespoon of olive oil, and the salt.
  3. Knead vigorously until you obtain a smooth and elastic dough. If necessary, add a little flour or water to achieve the desired consistency.
  4. Cover the dough with a damp cloth and let it rise in a warm place away from drafts for about 2 hours or until it doubles in volume.
  5. Once risen, roll out the dough on a lightly floured surface until it is about 3-4 mm thick.
  6. Use a round pastry cutter to cut out discs of dough.
  7. Place the discs on a baking tray lined with parchment paper, leaving some space between them.
  8. Top each disc with a spoonful of tomato sauce, a sprinkle of oregano, a pinch of salt, and chopped mozzarella.
  9. Let the mini pizzas rise again for another 20 minutes while you preheat the oven to 220 °C.
  10. Bake the mini pizzas for 10-15 minutes or until the edges turn golden brown and the mozzarella has melted and lightly browned.
  11. Before serving, drizzle some raw extra virgin olive oil over each mini pizza.
