Banoffee pie

The Banoffee Pie is a classic British dessert, a cold cake composed of layers of biscuits, toffee, and banana, often topped with whipped cream or custard. It’s a very indulgent dessert, and now I’ll provide you with a recipe with a small Italian twist.

Ingredients

  • 250 g of Digestive biscuits (or similar dry biscuits)
  • 100 g of melted butter
  • 1 can of sweetened condensed milk (about 397g, which will be caramelized for the toffee)
  • 2-3 ripe bananas
  • Lemon juice (to prevent the bananas from browning)
  • 250 ml of fresh cream for whipping
  • Cocoa powder or dark chocolate shavings for decoration (this is an Italian touch)

Preparation

  1. Start by caramelizing the sweetened condensed milk to make the toffee. There are various methods, but one of the safest involves placing the sealed can in a pot of water and boiling it for about 2-3 hours on low heat, making sure the can is always submerged in water. After that, let it cool completely before opening it.
  2. Crush the biscuits until they are fine crumbs and mix them with the melted butter. Press the biscuit mixture onto the bottom of a springform pan (about 23 cm in diameter) to form the base of your Banoffee Pie. Place in the refrigerator for about 30 minutes to set.
  3. Spread a layer of toffee (the caramelized condensed milk) over the set biscuit base.
  4. Slice the bananas and lightly bathe them with lemon juice to prevent darkening, then distribute them over the toffee layer.
  5. Whip the cream until it is firm and spread it over the bananas.
  6. As a final touch, dust with cocoa powder or decorate with dark chocolate shavings to add a touch of Italian flavor and decadence.
  7. Let it cool in the refrigerator for at least a couple of hours, better if overnight, before serving.

The Banoffee Pie was invented in 1971 by Nigel Mackenzie and Ian Dowding, the owner and chef of The Hungry Monk restaurant in Jevington, England. The name “Banoffee” is a portmanteau of “banana” and “toffee”. This dessert was such a hit that it quickly became popular not only in the United Kingdom but all over the world.
