Tray of Squid and Anchovies

The tray of squid and anchovies is a dish full of flavor, typical of Mediterranean cuisine. Here’s how you can prepare this delicious dish.

Ingredients

  • 500 g of cleaned squid
  • 300 g of fresh gutted anchovies
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 200 g of cherry tomatoes
  • 1 lemon (grated zest)
  • Breadcrumbs to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Begin by pre-heating the oven to 200 °C.
  2. Clean the squid by removing the innards, beak, and the internal cartilaginous quill. Wash well under running water and cut them into rings or leave whole according to your preferences.
  3. Wash and dry the anchovies. If they have not been gutted by the fishmonger, open them along the belly and remove the intestines.
  4. In a bowl, mix the anchovies and squid with 2 cloves of minced garlic, a handful of chopped fresh parsley, grated zest of one lemon, salt, and pepper to taste. Add a drizzle of extra virgin olive oil and mix well.
  5. Cut the cherry tomatoes in half and add them to the squid and anchovy mixture.
  6. Oil a baking tray and sprinkle the bottom lightly with breadcrumbs.
  7. Pour the squid and anchovy mixture into the tray and level it out. Sprinkle the surface with more breadcrumbs and a drizzle of extra virgin olive oil.
  8. Bake the tray and cook for about 20-25 minutes or until it is golden brown and crispy on the surface.

During cooking, the juices released by the fish will create a sort of tasty sauce that will make the dish even more delicious.
