Tray of Squid and Anchovies
17/11/2023The tray of squid and anchovies is a dish full of flavor, typical of Mediterranean cuisine. Here’s how you can prepare this delicious dish.
Ingredients
- 500 g of cleaned squid
- 300 g of fresh gutted anchovies
- 2 cloves of garlic
- Fresh parsley to taste
- 200 g of cherry tomatoes
- 1 lemon (grated zest)
- Breadcrumbs to taste
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- Begin by pre-heating the oven to 200 °C.
- Clean the squid by removing the innards, beak, and the internal cartilaginous quill. Wash well under running water and cut them into rings or leave whole according to your preferences.
- Wash and dry the anchovies. If they have not been gutted by the fishmonger, open them along the belly and remove the intestines.
- In a bowl, mix the anchovies and squid with 2 cloves of minced garlic, a handful of chopped fresh parsley, grated zest of one lemon, salt, and pepper to taste. Add a drizzle of extra virgin olive oil and mix well.
- Cut the cherry tomatoes in half and add them to the squid and anchovy mixture.
- Oil a baking tray and sprinkle the bottom lightly with breadcrumbs.
- Pour the squid and anchovy mixture into the tray and level it out. Sprinkle the surface with more breadcrumbs and a drizzle of extra virgin olive oil.
- Bake the tray and cook for about 20-25 minutes or until it is golden brown and crispy on the surface.
During cooking, the juices released by the fish will create a sort of tasty sauce that will make the dish even more delicious.
