Baked Zucchini Frittata

Ingredients
- 4 medium zucchinis
- 6 eggs
- 100 g of grated cheese (pecorino, parmesan, or a mix of the two)
- Salt and pepper to taste
- Extra virgin olive oil
- 1 clove of garlic
- Aromatic herbs as desired (basil, mint, parsley)
- 50 ml of milk (optional, to make the frittata softer)
- A pinch of nutmeg (optional)
Preparation
- Preheat the oven to 180 °C.
- Wash and slice the zucchinis into thin rounds or dice them, depending on your preference.
- In a large pan, heat a stream of olive oil with a clove of garlic to flavor it. Add the zucchinis and sauté them for a few minutes until they are slightly golden. Season with salt and pepper to taste.
- In a large bowl, beat the eggs with salt, pepper, grated cheese, chopped aromatic herbs, and, if desired, milk and nutmeg.
- Once the zucchinis are cooked, remove the garlic clove and add them to the egg mixture, mixing well to evenly distribute the zucchinis.
- Grease a baking dish with a little oil and transfer the mixture to the dish.
- Bake the frittata in the oven for about 20-25 minutes or until it is golden brown and well cooked in the center.
- Let it cool for a few minutes before serving.
