Baked Zucchini Frittata

Ingredients

  • 4 medium zucchinis
  • 6 eggs
  • 100 g of grated cheese (pecorino, parmesan, or a mix of the two)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • Aromatic herbs as desired (basil, mint, parsley)
  • 50 ml of milk (optional, to make the frittata softer)
  • A pinch of nutmeg (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash and slice the zucchinis into thin rounds or dice them, depending on your preference.
  3. In a large pan, heat a stream of olive oil with a clove of garlic to flavor it. Add the zucchinis and sauté them for a few minutes until they are slightly golden. Season with salt and pepper to taste.
