Baked Zucchini

  • 4 medium zucchinis

Preparation

  1. Preheat the oven to 180 °C (static mode).
  2. Wash the zucchini and cut them into rounds about half a centimeter thick.
  3. Take a baking tray and grease the bottom with a drizzle of extra virgin olive oil.
  4. Arrange the zucchini rounds on the tray in a single layer.
  5. Peel the garlic cloves and chop them very finely. Sprinkle the chopped garlic over the zucchini.
  6. Season the zucchini with salt and pepper to taste.
  7. Dust each zucchini round with a pinch of breadcrumbs and grated Parmesan cheese. This will create a golden and tasty crust.
  8. If you wish, you can also add some chopped aromatic herbs for an additional touch of flavor.
  9. Drizzle lightly with another thread of extra virgin olive oil over the seasoned zucchini.
  10. Bake the zucchini and let them cook for about 20-30 minutes or until golden brown and crispy on the surface.
