Baked Tomino

Baked Tomino is a simple and tasty dish typical of Piedmontese cuisine. Here’s the recipe for deliciously baked Tomino cheeses.

Ingredients

  • 4 Tomini (soft fresh cheeses similar to Robiola)
  • Aromatic herbs (rosemary, thyme, etc.) to taste
  • 2 cloves of garlic
  • Black pepper
  • Extra virgin olive oil
  • Salt (if necessary, depends on the saltiness of the Tomino)

Preparation

  1. Preheat the oven to 200 °C (392 °F).
  2. Take four large enough sheets of parchment paper to wrap each Tomino.
  3. Place each Tomino in the center of its own sheet.
  4. Add to each Tomino half a clove of garlic, some rosemary needles, a sprinkle of thyme, and a drizzle of extra virgin olive oil. If you love pepper, you can also grind some over the top.
  5. Close the parchment paper well around the Tomino, creating a small bundle, so that the aromas stay inside during baking.
  6. Place the bundles on a baking tray and bake for about 10-15 minutes or until the Tomini are soft to the touch.
  7. Remove them from the oven, open the bundles (be careful of the steam), and serve them while still hot.

You can enjoy the baked Tomini as they are or perhaps accompanied by toasted bread crostini or grilled vegetables. It’s a simple dish, but with a soft heart and an aroma that wins you over. Enjoy your meal!
