Baked Stuffed Squid

Ingredients

  • 4 medium-sized squid, cleaned
  • 100 g of stale bread
  • 30-40 g of grated Parmesan cheese
  • 1 clove of garlic
  • Fresh parsley to taste
  • Salt to taste
  • Pepper to taste
  • 1 egg
  • 10-12 pitted black olives
  • 2 tablespoons of salted capers, well rinsed
  • 4 tablespoons of extra virgin olive oil
  • 1 glass of dry white wine
  • Lemon juice (optional)

Preparation

  1. Start by soaking the stale bread in water or milk. Squeeze it out well and then crumble it into a bowl.
  2. Add the grated Parmesan, finely chopped garlic, and fresh parsley, also finely chopped, to the bowl.
  3. Incorporate the egg and mix until you have a homogeneous mixture. Add the chopped olives and capers, then season with salt and pepper to taste.
  4. Fill the squid with the prepared stuffing, without overstuffing to prevent them from opening during cooking. Close them with a toothpick.
  5. In an oven dish, arrange the stuffed squid and drizzle them with extra virgin olive oil and white wine. If you like, you can also add some lemon juice for a touch of freshness.
  6. Bake in a preheated oven at 180°C for about 30 minutes until they are golden brown and the wine has formed a light sauce.
