Oven-baked stuffed potatoes

Oven-baked stuffed potatoes are a delicious and fairly simple to prepare dish. I will offer you a classic version, remember that you can vary the ingredients according to your personal taste or dietary needs.

Ingredients

  • 4 medium-sized potatoes
  • 100 g of cooked ham (or bacon)
  • 100 g of cheese (cheddar, taleggio, or another of your choice)
  • 2 tablespoons of cream or milk
  • 1 egg
  • Salt and pepper to taste
  • Chives or chopped parsley for garnish
  • Butter to taste
  • Extra virgin olive oil to taste

Preparation

  1. Preheat the oven to 200 °C.
  2. Thoroughly wash the potatoes and prick them with a fork in several places, this will allow the heat to penetrate better during cooking.
  3. Rub the potatoes with a little extra virgin olive oil and place them on a baking tray to cook in the oven for about 1 hour or until they are soft inside.
  4. Once cooked, remove the potatoes from the oven and let them cool slightly. Cut each potato in half and scoop out the flesh with a spoon, leaving about a couple of millimeters thickness attached to the skin to maintain the shape.
  5. Mash the potato flesh in a bowl and add the cream (or milk), the egg, salt, pepper and mix well.
  6. Cut the cheese and cooked ham into small cubes and add them to the potato mixture.
  7. Fill the potato skins with the mixture, place a piece of butter on each and put back in the oven for another 15-20 minutes, or until they are golden brown on the surface.
  8. Once ready, serve the stuffed potatoes garnished with chives or chopped parsley.

You can personalize your stuffed potatoes by adding other ingredients such as smoked bacon, chopped mushrooms, caramelized onions, aromatic herbs or different types of cheese.

This dish is very versatile and can be adapted in countless variations. In Anglo-Saxon countries, they are very popular with bacon and cheddar cheese, and are often served as comfort food during sports gatherings. In Italy, you might find variants with speck and typical cheeses from the northern regions such as Trentingrana or Bitto.
