Baked Stuffed Peaches

Ingredients

  • 4 ripe but firm peaches
  • 100 g of amaretti biscuits
  • 50 g of sugar
  • 50 g of dark chocolate
  • 2 egg yolks
  • 30 g of soft butter
  • Sweet almond-flavored liquor or rum (optional)
  • Powdered sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash and dry the peaches. Cut them in half and remove the pit. Scoop out a little of the flesh to make room for the filling, if necessary.
  3. Crumble the amaretti biscuits into a bowl and combine them with the sugar.
  4. Finely chop the dark chocolate and add it to the amaretti and sugar mixture.
  5. Incorporate the egg yolks and soft butter into the previously obtained mixture, stirring until a homogeneous dough is achieved. If you like, add a little sweet liquor to enrich the flavor.
  6. Stuff the cavities of the peaches with the amaretti mixture.
  7. Place the stuffed peaches in a buttered baking dish or on a baking sheet lined with parchment paper, and bake in the oven for about 30 minutes or until the peaches are soft and the filling is slightly golden.
  8. Let the peaches cool down a bit before serving them, and if you like, dust them with powdered sugar.
