Lemon Baked Sole

Here is a simple and tasty recipe to prepare lemon baked sole with an Italian touch.

Ingredients

  • 4 sole fillets
  • 2 lemons (1 for juice and 1 sliced)
  • 2 tablespoons of extra virgin olive oil
  • 2 cloves of garlic, finely chopped
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Thinly sliced potatoes (optional)

Preparation

  1. Preheat the oven to 190 °C.
  2. Wash the sole fillets and dry them with kitchen paper. Arrange them in a baking dish lined with parchment paper or lightly oiled.
  3. Sprinkle the sole fillets with salt and pepper to your liking.
  4. In a small bowl, mix the juice of one lemon with the extra virgin olive oil and chopped garlic, then pour the mixture over the sole fillets.
  5. Arrange the remaining lemon slices on top or around the sole fillets in the dish.
  6. If you want to add an Italian touch and make the dish more substantial, you can also put thinly sliced potatoes in the dish, seasoned with oil, salt, and pepper, which will cook together with the fish.
  7. Bake the sole for about 12-15 minutes or until the fish is cooked through and flakes easily with a fork.
