Ingredients

  • 2 gutted and scaled gilthead breams (about 300-400 grams each)
  • 4 potatoes
  • 2 courgettes
  • 10 cherry tomatoes
  • 2 red onions
  • Pitted black olives (to taste)
  • Salted capers (to taste)
  • Extra virgin olive oil
  • Coarse salt
  • Black pepper
  • Fresh rosemary
  • Fresh thyme
  • 2 cloves of garlic
  • Juice of 1 lemon
  • White wine (a glass)

Preparation

  1. Take the cleaned breams and make oblique incisions on both sides of the fish.
  2. In a bowl, create a marinade with extra virgin olive oil, lemon juice, salt, pepper, and a bit of chopped rosemary and thyme. Brush the fish with this marinade, getting it inside the cuts, and let it rest while you prepare the vegetables.
  3. Wash and peel the potatoes, slice them, not too thinly. Slice the courgettes and onions as well.
  4. Arrange the vegetables and cherry tomatoes in a wide baking dish, sprinkle with e.v.o. oil, salt, pepper, add the remaining rosemary and thyme, and mix.
  5. Preheat the oven to 180°C (356°F).
  6. Create a layer of potatoes at the bottom of the dish, then add the courgettes and onions, with some black olives and capers. Finally, place the breams on top of the vegetables.
  7. Scatter around the black olives and capers, tuck the garlic cloves into the breams’ cuts, and pour the glass of white wine into the dish.
  8. Bake the bream with vegetables in the preheated oven at 180°C (356°F) for about 40-50 minutes, until the potatoes are soft and the fish is perfectly cooked, with a crispy skin.

Serve the bream hot with its side of vegetables.
