Ingredients
- 12 fresh scampi
- Juice of 1 lemon
- 3 cloves of garlic
- Chopped fresh parsley
- Salt and pepper to taste
- Extra virgin olive oil
- Breadcrumbs (optional)

Preheat the oven to 200 °C (392 °F).

Clean the scampi by removing the head and the shell, but leaving the tail tip. Remove the intestinal tract.

Cut the scampi in half lengthwise and arrange them on a baking sheet with the flesh facing up.

In a bowl, mix together extra virgin olive oil, lemon juice, chopped garlic, and parsley. Season the mixture with salt and pepper to taste.

Brush or pour the mixture over the prepared scampi halves, making sure they are well covered.

(Optional) Sprinkle a light layer of breadcrumbs on the scampi to add crunchiness.

Bake the scampi for about 10-15 minutes or until they turn pink and are slightly golden.
