Baked Sardine Cake

Ingredients

  • 500 g of fresh sardines
  • 100 g of breadcrumbs
  • 80 g of grated Parmesan cheese
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. Clean the sardines by removing the heads, innards, and the central bone, then wash and dry them with paper towels. Set them aside.
  2. In a bowl, mix the breadcrumbs with grated Parmesan cheese, one finely chopped garlic clove, and chopped fresh parsley. Season with salt and pepper to taste.
  3. Take a baking dish and grease the bottom with a drizzle of extra virgin olive oil.
  4. Arrange a layer of sardines on the bottom, then sprinkle over part of the breadcrumb and Parmesan mixture, creating a breading.
  5. Continue to alternate layers of sardines and breadcrumb mixture until all ingredients are used up, ending with a layer of breadcrumb mixture.
  6. Drizzle the top with a bit of extra virgin olive oil.
  7. Preheat the oven to 180 °C and bake the sardine cake for about 20-30 minutes, or until it is golden and crispy on the surface.
