Baked Salmon and Potatoes

Here is a classic Italian recipe for preparing baked salmon and potatoes, with a Mediterranean touch.

Ingredients

  • 4 fresh salmon steaks (about 150-200g each)
  • 800g of potatoes
  • 2 cloves of garlic
  • A few sprigs of fresh rosemary
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
  • (Optional) Taggiasca olives or capers for an extra touch

Preparation

  1. Preheat the oven to 200 °C.
  2. Thoroughly wash the potatoes, then cut them into wedges not too thin. Place them in a bowl and season with extra virgin olive oil, salt, pepper, minced garlic, and broken rosemary. Mix well to flavor them.
  3. Transfer the potatoes to a baking sheet lined with parchment paper and bake for about 20 minutes until they start to turn golden.
  4. In the meantime, prepare the salmon. Season the steaks with salt, pepper, and lemon juice. Let them marinate for the duration of the potatoes’ cooking time.
  5. After 20 minutes, remove the baking sheet from the oven and create space among the potatoes to place the salmon steaks.
  6. Return everything to the oven and cook for another 12-15 minutes, or until the salmon is cooked but still juicy inside.
  7. (Optional) Add Taggiasca olives or capers in the last minutes of cooking to enrich the flavor of the dish.
  8. Remove from the oven and serve the salmon and potatoes hot, drizzling with a raw extra virgin olive oil and, if you like, an additional spray of lemon juice.
