Baked Salmon

Baked salmon is a simple, healthy, and very tasty dish. Here you will find a basic version that I can then “Italianize” for you with some suggestions, if you wish.

Ingredients

  • 4 salmon fillets (about 150-200 grams each)
  • 2 lemons (juice and grated zest)
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs of your choice (for example, dill or parsley)

Preparation

  1. Preheat the oven to 200 °C.
  2. Wash and dry the salmon fillets. Sprinkle with salt and pepper to taste on both sides.
  3. Place the salmon fillets on a baking tray lined with parchment paper.
  4. Drizzle the salmon with the extra virgin olive oil and lemon juice. Add the grated zest of a lemon for an extra aroma.
  5. If you wish, sprinkle the chosen aromatic herbs over the salmon.
  6. Bake in the oven for about 12-15 minutes, or until the salmon is cooked but still moist in the center.

Italian Variations:

To give an Italian touch to your baked salmon, you could add Taggiasca olives and halved cherry tomatoes around the fish before baking. You could also sprinkle some breadcrumbs mixed with chopped parsley on top of the fillets to create a crispy crust during cooking.
