Baked Romanesco Broccoli

Ingredients

  • 1 Romanesco broccoli
  • 2 cloves of garlic
  • 3-4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • A pinch of chili pepper (optional)
  • Breadcrumbs (optional)
  • Grated Parmesan cheese (optional)

Preparation

  1. Preheat the oven to 200 °C (fan-assisted) or 220 °C (conventional).
  2. Wash the Romanesco broccoli and cut it into florets, removing the central core.
  3. Put the florets in a large bowl, add extra virgin olive oil, crushed or minced garlic cloves, a pinch of salt, and black pepper to taste. If you like, you can add a bit of chili pepper for a spicy touch.
  4. Mix well so that the florets are evenly coated with the oil and seasonings.
  5. Arrange the florets on a baking tray lined with parchment paper in a single layer, making sure not to overlap them.
  6. If you want to add a crunchy note, sprinkle some breadcrumbs and grated Parmesan cheese over the florets.
  7. Bake for 20-25 minutes or until the Romanesco florets are golden and crispy at the edges.
  8. Serve hot as a side dish.
