Baked Rabbit

Here is a typical Italian recipe for preparing a delicious baked rabbit:

Ingredients

  • 1 whole rabbit cut into pieces
  • 3 sprigs of rosemary
  • 5 cloves of garlic
  • 1/2 glass of white wine
  • 100 ml of extra virgin olive oil
  • Salt and pepper to taste
  • 1 lemon (the juice)
  • Potatoes (optional, if you want to add them as a side dish)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, marinate the pieces of rabbit with lemon juice, salt, pepper, crushed garlic, rosemary broken into pieces, and a drizzle of oil. Let rest for at least 30 minutes.
  3. Transfer the pieces of rabbit to a baking dish, arranging them in a single layer.
  4. Pour the white wine and an extra drizzle of olive oil over the rabbit pieces.
  5. If you want to add potatoes, cut them into regular pieces and place them around the meat in the dish. Also season the potatoes with a drizzle of oil, salt, and pepper.
  6. Bake and cook for about 1 hour or until the rabbit is golden brown and well cooked, turning the pieces halfway through cooking.
  7. During cooking, occasionally baste the rabbit with its cooking juices to keep it moist and flavored.

For an even more Italian twist, you could add Taggiasca olives in the last 15 minutes of cooking for a touch of Mediterranean flavor.

Curiosity

Baked rabbit is a highly appreciated dish in Italian cuisine, especially in the central regions of Italy such as Tuscany and Umbria, where it is often accompanied by local aromatic herbs and served with rustic sides like roasted potatoes.
