Ingredients
- 6 medium eggs
- 500g of potatoes
- 1 small onion (optional)
- 100g of grated cheese (Parmesan, pecorino, or a mix of the two)
- Salt and pepper as needed
- Extra virgin olive oil
- Chopped parsley (optional)
- Milk or water (a couple of tablespoons, optional)
Preparation
- Preheat the oven to 180 °C.
- Peel the potatoes and cut them into medium cubes of about 1 cm. If you wish to add onion, slice it finely.
- Heat a drizzle of oil in a pan and cook the potatoes (and the onion if using) until they are golden and tender. Lightly salt them during cooking.
- In a large bowl, beat the eggs with a pinch of salt and pepper. Add milk or water if you desire a softer texture.
- Add the grated cheese to the eggs and mix well.
- Once the potatoes are ready, incorporate them into the bowl with the beaten eggs and mix gently.
- Pour the mixture into a baking dish lined with parchment paper or grease the dish with a bit of oil.
