Baked Potato Croquettes

Ingredients

  • 800 g of potatoes
  • 80 g of grated Parmesan cheese
  • 1 egg
  • Salt to taste
  • Freshly ground black pepper to taste
  • Nutmeg to taste
  • Bread crumbs to taste
  • Butter to taste (for greasing the tray)

Preparation

  1. Start by thoroughly washing the potatoes and boil them in salted water until they are tender, which may take about 20-30 minutes depending on their size.
  2. Once cooked, drain them, peel them, and mash them with a potato masher to obtain a smooth and homogeneous puree.
  3. Add the grated Parmesan cheese, a pinch of salt, freshly ground black pepper, and a bit of nutmeg to taste to the potato puree. Mix well to blend the ingredients.
  4. Let the potato mixture cool, and then incorporate the egg, working until the mixture is well bound.
  5. Preheat the oven to 200 °C and grease a baking tray with a bit of butter.
  6. Shape the potato mixture into croquettes, roll them in bread crumbs, and place them on the greased tray, leaving some space between each one.
  7. Bake in the oven for about 20 minutes or until the croquettes are golden and crispy, turning them halfway through to ensure they brown evenly.
  8. Remove the potato croquettes from the oven and serve them hot.

I recommend serving the croquettes with a sauce of your choice, such as a fresh tomato sauce, an aioli sauce, or a simple mayonnaise to further enhance this dish.
