Oven-baked peppers

Oven-baked peppers are a simple yet delicious dish, perfect as a side or to accompany main courses. Here is the recipe:

Ingredients

  • Peppers (as many as you want, generally one per person can be enough)
  • Salt, to taste
  • Extra virgin olive oil, to taste
  • Garlic, 1 clove (optional)
  • Oregano or fresh basil, to taste
  • Balsamic vinegar (optional, for an extra touch)

Preparation

  1. Wash the peppers and dry them well. Preheat the oven to 200°C (392°F).
  2. Cut the peppers in half, remove the seeds and the white inner parts, then cut them into strips or pieces, according to your preference.
  3. Place the peppers on a baking sheet lined with parchment paper, skin side up. If you like, you can add a whole clove of garlic or unpeeled garlic to the tray for additional flavor.
  4. Season the peppers with a drizzle of extra virgin olive oil, salt, and, if liked, a pinch of oregano or torn fresh basil leaves.
  5. Bake the peppers for about 20-30 minutes or until the skin starts to turn blackish and the peppers appear well-roasted. The time may vary depending on the oven and the size of the peppers.
  6. Once cooked, you can leave them in the turned-off oven with the door slightly ajar for a few minutes: this will make peeling the skin off easier. Then, peel the peppers (this step is optional).
  7. Arrange the peppers on a serving dish and, if desired, drizzle with balsamic vinegar before serving.

Oven-baked peppers can be enjoyed either hot or at room temperature, making them a great choice for buffets or picnics as well.
