Ingredients

  • 4 pangasius fillets
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic, chopped
  • A handful of capers, rinsed and desalted
  • A handful of green or black olives, pitted and chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Chopped parsley, for garnish
  • 1 ripe tomato, chopped (optional for a touch of freshness and color)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a frying pan, heat the extra virgin olive oil and sauté the chopped garlic until golden brown.
  3. In a bowl, mix the capers and olives with the lemon juice. Add the sautéed garlic to the emulsion and mix well.
  4. Place the pangasius fillets in a baking dish lined with parchment paper and season with salt and pepper to taste.
  5. Pour the mixture of olives, capers, and lemon over the pangasius fillets.
  6. If you like, you can also add the chopped tomato, distributing it over the fillets.
  7. Bake and cook for about 15-20 minutes, or until the pangasius is well cooked and flakes easily with a fork.
  8. Remove from the oven and sprinkle fresh chopped parsley over the fillets before serving.

This dish has flavors that are reminiscent of Italian cuisine, thanks to the presence of olive oil, capers, and olives, which are typical ingredients of Mediterranean cooking. You can pair this dish with a simple salad or with steamed white rice for a complete and balanced meal. Enjoy your meal!
