Baked Mushroom Pastries

Ingredients
- 500 g of mixed mushrooms (for example, champignons, porcini, shiitake)
- 1 clove of garlic
- Fresh parsley to taste
- 1 small onion
- 150 g of smoked scamorza cheese (or another cheese of your choice)
- 100 g of pancetta in cubes (optional for a richer variant)
- 250 ml of béchamel sauce
- Extra virgin olive oil
- Salt and pepper to taste
- Breadcrumbs
- Grated Parmesan cheese
- 2 rolls of puff pastry (if you desire a crunchy base, otherwise it can be excluded for a lighter version)
Preparation
- Clean the mushrooms thoroughly with a damp cloth or a brush, then slice or cut them into pieces.
- Finely chop the garlic and onion and then sauté them in a pan with a drizzle of extra virgin olive oil and, if using, the cubed pancetta.
- Add the mushrooms to the pan and cook over medium-high heat until they have released all their water and it has evaporated.
- Season the mushrooms with salt and pepper to taste, then add the freshly chopped parsley and let it flavor for a few minutes.
- In a baking dish, roll out the puff pastry to create a base for the pastries (if using the pastry).
- Pour the mushrooms over the puff pastry base, evenly add the diced scamorza, and cover with the béchamel sauce.
- Sprinkle the surface with a mix of grated Parmesan cheese and breadcrumbs for a crunchy gratin.
- Bake in a preheated oven at 180 °C (356 °F) for about 20-25 minutes or until the surface becomes golden and crisp.
- Let it cool before serving.
