Baked Marinated Salmon

Here’s the recipe to prepare a delicious oven-baked marinated salmon, with an Italian touch in the seasoning.

Ingredients

  • 4 salmon fillets (150-200g each)
  • Juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic, crushed
  • 1 sprig of fresh rosemary
  • Salt and pepper to taste
  • 1 tablespoon of finely chopped aromatic herbs (such as dill or parsley)
  • Grated zest of 1 lemon (for an intensification of the citrus flavor)
  • White wine, about 1/2 cup (for an even more Italian variant)

Preparation

  1. Preheat the oven to 180 °C (356 °F).
  2. In a bowl, prepare the marinade by combining lemon juice, extra virgin olive oil, crushed garlic, chopped rosemary (or left whole if you prefer a less intense aroma), salt, pepper, the chopped aromatic herbs, and the grated lemon zest. If you wish, you can also add a bit of white wine to give the dish an extra twist.
  3. Place the salmon fillets in a baking dish and pour over the marinade, making sure the fish is well covered.
  4. Marinate the salmon in the refrigerator for at least 30 minutes.
  5. Line the oven tray with parchment paper and lay the salmon fillets on top, removing the excess marinade.
  6. Bake in the oven for 12-15 minutes, or until the salmon is cooked but still moist inside.
  7. Remove from the oven and let the salmon rest for a couple of minutes before serving.
