Baked Marinated Salmon
17/11/2023Here’s the recipe to prepare a delicious oven-baked marinated salmon, with an Italian touch in the seasoning.
Ingredients
- 4 salmon fillets (150-200g each)
- Juice of 1 lemon
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic, crushed
- 1 sprig of fresh rosemary
- Salt and pepper to taste
- 1 tablespoon of finely chopped aromatic herbs (such as dill or parsley)
- Grated zest of 1 lemon (for an intensification of the citrus flavor)
- White wine, about 1/2 cup (for an even more Italian variant)
Preparation
- Preheat the oven to 180 °C (356 °F).
- In a bowl, prepare the marinade by combining lemon juice, extra virgin olive oil, crushed garlic, chopped rosemary (or left whole if you prefer a less intense aroma), salt, pepper, the chopped aromatic herbs, and the grated lemon zest. If you wish, you can also add a bit of white wine to give the dish an extra twist.
- Place the salmon fillets in a baking dish and pour over the marinade, making sure the fish is well covered.
- Marinate the salmon in the refrigerator for at least 30 minutes.
- Line the oven tray with parchment paper and lay the salmon fillets on top, removing the excess marinade.
- Bake in the oven for 12-15 minutes, or until the salmon is cooked but still moist inside.
- Remove from the oven and let the salmon rest for a couple of minutes before serving.
Curiosity
Salmon is a very versatile and healthy fish, rich in Omega-3. The marinade not only flavors the fish but can also help to “cook” it slightly, especially if lemon juice or vinegar is used in the marinade. Serve this dish with a side of seasonal vegetables or a fresh salad for a balanced and delicious meal.
