Ingredients

  • 3 medium-sized leeks
  • 6 eggs
  • 100 ml of cooking cream (optional for a creamier version)
  • 100 g of grated cheese (Parmesan or Pecorino, depending on preference)

  • Nutmeg (optional)
  • Butter or extra virgin olive oil for greasing the baking dish
  • Breadcrumbs (optional, for added crunch)

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the leeks by removing the tougher green parts and the root. Slice the leeks into rings and wash them thoroughly under running water to remove any dirt residue.
  3. In a pan, cook the leeks with a drizzle of oil or a knob of butter over medium-low heat until they become soft and slightly caramelized. Adjust with salt and pepper.
  4. Grease a baking dish with butter or oil. Spread the cooked leeks on the bottom of the baking dish.
  5. In a bowl, beat the eggs with the cooking cream (if you decide to use it), half of the grated cheese, a pinch of salt, pepper, and nutmeg.
  6. Pour the egg mixture over the leeks in the baking dish. Sprinkle the rest of the grated cheese and, if you wish, some breadcrumbs for a crunchier surface.
  7. Bake for about 15-20 minutes or until the eggs are cooked through and the surface is golden.
  8. Serve hot directly from the baking dish.
