Baked Fritters

Baked fritters are a lighter alternative to the fried ones, while still maintaining a delicious taste. Perfect for those looking for something sweet with fewer calories. Here is the recipe.

Ingredients

  • 250 g of all-purpose flour
  • 50 g of sugar
  • 1 egg
  • 125 ml of lukewarm milk
  • 25 g of melted butter
  • 8 g of fresh yeast (or 2 g of dry yeast)
  • A pinch of salt
  • The grated zest of 1 lemon
  • Raisins (optional)
  • Powdered sugar for dusting

Preparation

  1. Preheat the oven to 180 °C.

  2. If you want to use raisins, soak them in lukewarm water for about 15-20 minutes, then drain and pat dry with kitchen paper.

  3. Dissolve the yeast in the lukewarm milk. If you’re using dry yeast, follow the package instructions for activation.

  4. In a large bowl, mix the flour with sugar and a pinch of salt.

  5. Add the egg and begin to blend.

  6. Incorporate the milk with the yeast and continue stirring until a uniform mixture is obtained.

  7. Add the melted butter and the grated lemon zest. If you have decided to use raisins, add them now.

  8. Cover the dough with a kitchen towel and let it rise in a warm place for about 1-2 hours, or until it has doubled in volume.

  9. Line a baking sheet with parchment paper and, with the help of two spoons, form small dough quenelles, placing them on the tray, leaving a little space between each one.

  10. Bake in the oven for about 15-20 minutes, until the fritters are golden.

  11. Take the fritters out of the oven and let them cool slightly, then dust them with powdered sugar before serving.
