Baked Frittata

Baked frittata is a variation of the more classic pan dish that has the advantage of being lighter and is perfect for when you need to prepare portions for many people. Here is how to prepare it.

Ingredients

  • 6 large eggs
  • 100 ml of milk
  • Salt and pepper to taste
  • 50 g of grated cheese (pecorino or parmesan)
  • Herbs of your choice (e.g., parsley, basil, chives)
  • 1 small onion (optional)
  • Extra virgin olive oil to taste
  • Extra ingredients of your choice, such as vegetables (zucchini, peppers, spinach), cold cuts (cooked ham, speck) or cheeses (mozzarella, goat cheese)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with a pinch of salt and pepper until you have a homogeneous mixture.
  3. Add milk and grated cheese to the mixture and mix well.
  4. If you wish to add onion, cut it into thin slices and lightly sauté it in a pan with a drizzle of oil until it becomes translucent.
  5. Incorporate the chopped herbs and any other extra ingredients you have chosen into the egg mixture, including the onion if you have decided to use it.
  6. Pour a drizzle of oil in an ovenproof dish and spread it over the entire surface to prevent the frittata from sticking.
  7. Pour the mixture into the dish and bake for about 25-30 minutes or until the frittata is golden on top and well cooked in the center.
  8. Allow to cool for a few minutes before cutting the frittata into portions and serving.

The baked frittata can be prepared in advance and consumed either hot or cold. It’s perfect for picnics, buffets, or as an office lunch. Plus, it’s a great way to use up leftover vegetables or cold cuts you have in the fridge.
