Baked Fish Skewers

Baked fish skewers are a light and tasty dish, perfect for a fish-based dinner. Here is the recipe to make delicious seafood skewers, embellished with an Italian touch.

Ingredients

  • 600 g of fish fillets of your choice (e.g., salmon, sea bream, sea bass)
  • 200 g of peeled shrimp
  • 2 zucchinis
  • 1 red pepper
  • 1 lemon
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley (optional)
  • Wooden or metal skewers

Preparation

  1. Preheat the oven to 200 °C.
  2. First, if you are using wooden skewers, soak them in water for about 30 minutes to prevent them from burning in the oven.
  3. Cut the fish into approximately 3 cm cubes to be threaded onto the skewers.
  4. Clean the shrimp and leave them whole if they are small or cut them in half if they are large.
  5. Wash the zucchinis and the pepper, then cut them into not too thin pieces that don’t break when skewered.
  6. Assemble the skewers by alternating pieces of fish, shrimp, zucchinis, and pepper.
  7. Arrange the skewers on a baking tray lined with parchment paper and season them with extra virgin olive oil, salt, pepper, and the juice of the squeezed lemon. If you like, you can also add some chopped parsley for a fresh Italian aroma.
  8. Bake the skewers and let them cook for about 10-15 minutes or until the fish is cooked and slightly golden. This cooking time can vary depending on the oven and the size of the fish pieces.
  9. Remove from the oven and serve the skewers hot, perhaps accompanied by a nice fresh salad or pilaf rice.
