Baked gratin cod

Baked gratin cod is a simple yet very tasty dish. Here is the recipe:

Ingredients

  • 4 cod fillets (fresh or frozen)
  • Breadcrumbs as needed
  • 2 cloves of garlic
  • Chopped fresh parsley
  • Extra virgin olive oil
  • Salt and pepper as needed
  • Lemon (the juice, and if you like, the grated zest)
  • (Optional) Taggiasca olives or capers for adding a touch of Mediterranean flavor

Preparation

  1. Preheat the oven to 200 °C (392 °F).
  2. If using frozen cod, thaw it completely. Pat the cod fillets dry with kitchen paper.
  3. In a dish, mix the breadcrumbs with the chopped garlic, parsley, salt, pepper, and if you like, also the grated lemon zest for a citrus note.
  4. Arrange the cod fillets in a baking dish previously greased with extra virgin olive oil.
  5. Brush the surface of the fillets with a little oil and then drizzle with lemon juice.
  6. Cover the fillets with the breadcrumb mixture and press lightly to make the mixture stick.
  7. If you wish, you can add Taggiasca olives or capers on top of the gratin to enrich the dish.
  8. Bake for about 15-20 minutes, until the surface is golden brown and the cod is cooked to the right point.
  9. Serve immediately, perhaps accompanying the dish with a fresh salad or steamed vegetables.
