Baked Cod

Ingredients

  • 4 cod fillets
  • 2 tablespoons of extra virgin olive oil
  • Juice of 1 lemon
  • 2 cloves of garlic, chopped
  • 1 teaspoon of chopped fresh rosemary (or herbs of your choice)
  • Salt and pepper to taste
  • 1 large tomato, sliced (optional)
  • Pitted black olives to taste (optional)

Preparation

  1. Preheat oven to 200 °C (392 °F).
  2. In a small bowl, mix the lemon juice with olive oil, chopped garlic, and rosemary. Add salt and pepper to taste.
  3. Lay the cod fillets in a lightly oiled baking dish. Sprinkle with the prepared lemon and herb mixture.
  4. If desired, add tomato slices on top of the cod and distribute some black olives.
  5. Bake for about 15-20 minutes, or until the cod becomes opaque and flakes easily with a fork.
  6. Serve the cod hot, possibly with a sprinkle of fresh herbs as garnish.
