Baked Cod

Ingredients
- 4 cod fillets
- 2 tablespoons of extra virgin olive oil
- Juice of 1 lemon
- 2 cloves of garlic, chopped
- 1 teaspoon of chopped fresh rosemary (or herbs of your choice)
- Salt and pepper to taste
- 1 large tomato, sliced (optional)
- Pitted black olives to taste (optional)
Preparation
- Preheat oven to 200 °C (392 °F).
- In a small bowl, mix the lemon juice with olive oil, chopped garlic, and rosemary. Add salt and pepper to taste.
- Lay the cod fillets in a lightly oiled baking dish. Sprinkle with the prepared lemon and herb mixture.
- If desired, add tomato slices on top of the cod and distribute some black olives.
- Bake for about 15-20 minutes, or until the cod becomes opaque and flakes easily with a fork.
- Serve the cod hot, possibly with a sprinkle of fresh herbs as garnish.
