Baked Chicken Meatballs

Ingredients
- 500 g minced chicken breast
- 1 egg
- 60 g breadcrumbs
- 50 g grated cheese (Parmesan or Pecorino, according to taste)
- 1 clove of minced garlic (optional)
- Chopped fresh parsley to taste
- Salt and pepper to taste
- A drizzle of olive oil
Preparation
- Preheat the oven to 180ºC (350ºF).
- In a large bowl, mix the minced chicken with the egg, breadcrumbs, and grated cheese.
- Add the minced garlic and parsley, then season with salt and pepper to taste. If you like, you can also add a pinch of chili pepper to add a touch of spiciness.
- Mix all the ingredients well until you have a homogeneous mixture.
- Lightly grease your hands with oil and shape the mixture into meatballs of the desired size.
- Place the meatballs on a baking tray lined with parchment paper and drizzle with a bit of olive oil, which will help them turn golden and crispy on the outside.
- Bake the meatballs for approximately 20-25 minutes or until they are golden brown and fully cooked in the center.
You can serve the baked chicken meatballs with a light tomato sauce or with a side of grilled or steamed vegetables.
