Baked Chicken Meatballs

Ingredients

  • 500 g minced chicken breast
  • 1 egg
  • 60 g breadcrumbs
  • 50 g grated cheese (Parmesan or Pecorino, according to taste)
  • 1 clove of minced garlic (optional)
  • Chopped fresh parsley to taste
  • Salt and pepper to taste
  • A drizzle of olive oil

Preparation

  1. Preheat the oven to 180ºC (350ºF).
  2. In a large bowl, mix the minced chicken with the egg, breadcrumbs, and grated cheese.
  3. Add the minced garlic and parsley, then season with salt and pepper to taste. If you like, you can also add a pinch of chili pepper to add a touch of spiciness.
  4. Mix all the ingredients well until you have a homogeneous mixture.
  5. Lightly grease your hands with oil and shape the mixture into meatballs of the desired size.
  6. Place the meatballs on a baking tray lined with parchment paper and drizzle with a bit of olive oil, which will help them turn golden and crispy on the outside.
  7. Bake the meatballs for approximately 20-25 minutes or until they are golden brown and fully cooked in the center.

You can serve the baked chicken meatballs with a light tomato sauce or with a side of grilled or steamed vegetables.
