Baked Chicken Cutlets

Let me present you the recipe for delicious Italian-style baked chicken cutlets. This dish is a lighter and healthier version of the classic breaded and fried cutlets.

Ingredients

  • 4 boneless, skinless chicken breasts
  • About 100 grams of breadcrumbs
  • 50 grams of grated Parmesan cheese
  • 2 eggs
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil to taste
  • (Optional) aromatic herbs such as thyme, rosemary, or oregano

Preparation

  1. Preheat the oven to 200°C.
  2. In a bowl, lightly beat the eggs with a pinch of salt and pepper.
  3. In another bowl, mix the breadcrumbs with the Parmesan cheese and, if you like, finely chopped aromatic herbs.
  4. Take the chicken breasts, and if they’re very thick, slice them horizontally to get thinner fillets.
  5. Dip each piece of chicken first in the beaten egg, letting the excess drip off, and then in the breadcrumb and Parmesan mixture, making sure it adheres well on both sides.
  6. Place the breaded cutlets on a baking tray lined with parchment paper and drizzle with a little extra virgin olive oil.
  7. Bake the cutlets for about 20-25 minutes or until they are golden and crispy. Halfway through cooking, you can turn them over to brown evenly on both sides.
  8. Once cooked, remove the cutlets from the oven and let them rest for a few minutes before serving.

If you wish, you can serve the baked chicken cutlets with a fresh seasonal salad or steamed vegetables for a balanced and tasty dish.

Curiosity

Cutlets, typically known as “Milanese” when prepared with veal meat, are a much-loved dish in Italy, particularly in Lombardy. The oven-baked version was created out of the need to make this entree lighter and healthier, without sacrificing the crunchiness and flavor that characterize it.
