Baked Calamari Rings

Ingredients

  • 500 g of cleaned calamari rings
  • 2 cloves of garlic
  • Breadcrumbs
  • Chopped fresh parsley
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Lemon (to serve)
  • Chili powder to add a bit of spiciness (optional)

Preparation

  1. Preheat the oven to 200 °C.
  2. In a bowl, place the calamari rings and add finely chopped garlic, a pinch of salt and pepper, and if you like, a bit of chili powder.
  3. Add plenty of chopped parsley and mix well all the ingredients.
  4. Pour a drizzle of extra virgin olive oil and blend to ensure the calamari rings are evenly flavored.
  5. Dredge the calamari rings in breadcrumbs until they are covered on all sides. This process will ensure a crispy crust.
  6. Arrange the breaded rings on a baking tray lined with parchment paper, making sure not to overlap them.
  7. Drizzle the rings with another light stream of extra virgin olive oil.
  8. Cook in the oven for about 15-20 minutes or until the calamari are golden and crispy on the outside.
  9. Remove from the oven and serve immediately with lemon wedges to squeeze over as desired for a touch of freshness.
