Eggplant Stuffed Baguettes

Ingredients
- 2 baguettes
- 2 large eggplants
- 200 g of mozzarella (or sweet provolone)
- 2 cloves of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh basil
- Grated Parmesan cheese
- Tomato sauce (optional, for a moister variant)
Preparation
- Preheat the oven to 180°C (356°F).
- Wash the eggplants and cut them into cubes of about 1 cm on each side. Place them in a colander, sprinkle with salt, and let them rest for about 30 minutes to remove the bitterness.
- In the meantime, cut the baguettes in half lengthwise and hollow out some of the inside to make room for the filling.
- Heat a drizzle of oil in a pan and sauté the peeled and crushed garlic cloves. When they are golden, remove the garlic and add the rinsed and dried eggplants. Cook until they are golden brown and soft.
- If you wish, you can add a bit of tomato sauce and cook for another 5-10 minutes.
- Cut the mozzarella into cubes and chop the basil.
- Remove the eggplants from the heat and season them with basil, salt, pepper, and grated Parmesan cheese. Add the mozzarella cubes and mix well.
- Stuff the baguettes with the eggplant and mozzarella mixture.
- Wrap the stuffed baguettes in foil and bake for about 10-15 minutes, until the cheese is well melted.
- Serve the baguettes hot, perhaps accompanied by a fresh salad or other grilled vegetables.
