Avocado, Eggs, and Salmon

Avocado, eggs, and salmon can be combined in many ways to create delicious dishes. One of the simplest and most elegant preparations is the stuffed avocado. Here’s how to do it:

Ingredients

  • 2 ripe but still firm avocados
  • 4 eggs
  • 100g of smoked salmon
  • Salt and pepper, to taste
  • Lemon juice, as desired
  • Chopped chives, for garnishing (optional)
  • A handful of arugula or mixed salad to serve (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Cut the avocados in half and remove the pit, creating a little more room by slightly scooping out some of the flesh with a spoon, so as to accommodate the egg. Drizzle with a few drops of lemon juice to prevent oxidation.
  3. Place the avocado halves on a baking tray lined with parchment paper. Try to position them so that they stand as upright as possible to prevent the egg from spilling out.
  4. Crack one egg at a time and gently separate the yolk from the white, keeping the yolk intact. Pour the yolk into the avocado cavity and add enough white to fill the space without overflowing.
  5. Season with salt and pepper.
  6. Bake in the oven for about 15-20 minutes or until the egg white is completely set and the yolk has reached the desired doneness.
  7. While the avocados are baking, slice the smoked salmon into thin strips.
  8. Once the avocados are cooked, remove them from the oven and place the smoked salmon on top.
  9. Garnish with chopped chives and, if desired, serve with some fresh arugula or salad.
