Avocado, Eggs, and Salmon
17/11/2023Avocado, eggs, and salmon can be combined in many ways to create delicious dishes. One of the simplest and most elegant preparations is the stuffed avocado. Here’s how to do it:
Ingredients
- 2 ripe but still firm avocados
- 4 eggs
- 100g of smoked salmon
- Salt and pepper, to taste
- Lemon juice, as desired
- Chopped chives, for garnishing (optional)
- A handful of arugula or mixed salad to serve (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Cut the avocados in half and remove the pit, creating a little more room by slightly scooping out some of the flesh with a spoon, so as to accommodate the egg. Drizzle with a few drops of lemon juice to prevent oxidation.
- Place the avocado halves on a baking tray lined with parchment paper. Try to position them so that they stand as upright as possible to prevent the egg from spilling out.
- Crack one egg at a time and gently separate the yolk from the white, keeping the yolk intact. Pour the yolk into the avocado cavity and add enough white to fill the space without overflowing.
- Season with salt and pepper.
- Bake in the oven for about 15-20 minutes or until the egg white is completely set and the yolk has reached the desired doneness.
- While the avocados are baking, slice the smoked salmon into thin strips.
- Once the avocados are cooked, remove them from the oven and place the smoked salmon on top.
- Garnish with chopped chives and, if desired, serve with some fresh arugula or salad.
