Avocado cheesecake
17/11/2023Avocado Cheesecake is an original dessert that combines the creaminess of cheese with the freshness of avocado, creating a healthier and more unusual alternative to classic cheesecakes. Here’s how to make one with an international flavor and an Italian twist.
Ingredients
- 200 g of Digestive biscuits or similar
- 100 g of melted butter
- 3 ripe avocados
- 300 g of cream cheese, like Philadelphia
- 120 g of powdered sugar
- 1 lemon (juice and grated zest)
- 10 g of sheet gelatin or 5 g of powdered gelatin
- A pinch of salt
- Berries and fresh mint for decoration
For the base:
- 1 pinch of salt
- 30 g of sugar
Preparation
Biscuit base:
- Finely chop the biscuits and mix them with the melted butter. Add a pinch of salt and the sugar to enhance the flavor.
- Press the biscuit mixture onto the bottom of a springform pan previously lined with parchment paper.
- Refrigerate for at least 30 minutes to harden the base.
Filling:
- Soak the gelatin in cold water for about 10 minutes if using sheets, or prepare it according to package instructions if it’s powder.
- Peel the avocados, remove the pit, and blend the pulp with the lemon juice and zest.
- In a bowl, beat the cream cheese with the powdered sugar until you get a smooth cream.
- Squeeze the soaked gelatin and melt it in a saucepan with a spoonful of hot water (if necessary), then incorporate it into the avocado cream, mixing well to avoid lumps.
- Combine the avocado cream with the cheese cream, mixing gently until you obtain a homogeneous mixture.
- Pour the obtained cream onto the biscuit base and let it rest in the fridge for at least 4 hours, better if overnight.
Before serving, decorate the cake with berries and fresh mint leaves for a contrast of colors and flavors.
