Avocado and Salmon Starter

Ingredients

  • 2 ripe avocados

Preparation

  1. Start by cutting the avocados in half, remove the pit and with a spoon, scoop out the flesh being careful not to break the skin which can serve as a decorative bowl.
  2. Dice the avocado pulp, and sprinkle it with lemon juice to prevent browning and add a pinch of salt and pepper.
  3. Cut the smoked salmon into strips or cubes, according to your preference.
  4. In a bowl, gently mix the avocado cubes with the smoked salmon.
  5. If you wish, you can add a drizzle of extra virgin olive oil and/or a little Modena balsamic vinegar to give an Italian touch and enhance the complexity of the flavor.
  6. Fill the avocado skins with the salmon and avocado mixture. If you have scooped out the flesh well, they should resemble little boats.
  7. Finish with chopped chives or dill to garnish and add a touch of freshness.
