Gratined Eggs

Gratined eggs are a simple yet very tasty dish. Here’s how to prepare them in the Italian way.

Ingredients

  • 4 eggs
  • 40 g of butter
  • 40 g of flour
  • 250 ml of milk
  • 100 g of grated cheese (parmesan or pecorino)
  • Salt and pepper to taste
  • Nutmeg to taste

Preparation

  1. Cook the eggs in boiling water for about 8-9 minutes to get hard-boiled eggs. After cooking, immerse them in cold water, then peel them.

  2. Prepare the béchamel by melting butter in a saucepan. Add the flour and stir for a couple of minutes over low heat, to prevent the flour from coloring.

  3. Pour the milk slowly, continuing to stir to avoid lumps. Continue cooking until the béchamel thickens slightly. Add salt, pepper, and a sprinkle of nutmeg. The béchamel should not be too thick, as it needs to cover the eggs easily.

  4. Cut the hard-boiled eggs in half lengthwise and place them in a buttered baking dish with the cut side up.

  5. Cover the eggs with the béchamel and sprinkle with plenty of grated cheese.

  6. Put the baking dish under the preheated oven grill until the surface becomes golden and crispy.

Trivia

This recipe is a great way to serve eggs differently and can be easily customized. For example, you can enhance the béchamel with diced cooked ham or chopped fresh herbs. Gratined eggs can be served as an appetizer or as a main dish, accompanied by a fresh green salad.
