Arugula Meatballs

Ingredients
- 200g of fresh arugula
- 100g of stale bread
- 150g of ricotta cheese
- 50g of grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- 1 clove of garlic
- Bread crumbs as needed
- Extra virgin olive oil for frying
Preparation
- Start by finely chopping the arugula after washing and drying it.
- Soften the stale bread in water and then squeeze it out well.
- In a bowl, combine the chopped arugula with the softened bread, ricotta, and grated Parmesan.
- Add the egg, a pinch of salt and pepper, and the finely chopped garlic clove to flavor the mixture.
- Mix everything well until the mixture is homogeneous. If it’s too soft, add breadcrumbs until the desired consistency is achieved.
- Form small meatballs with the mixture and roll them in breadcrumbs.
- Heat plenty of extra virgin olive oil in a pan and fry the meatballs until they are golden and crispy on all sides.
- Drain them on paper towels to remove excess oil.
