Arugula Meatballs

Ingredients

  • 200g of fresh arugula
  • 100g of stale bread
  • 150g of ricotta cheese
  • 50g of grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 1 clove of garlic
  • Bread crumbs as needed
  • Extra virgin olive oil for frying

Preparation

  1. Start by finely chopping the arugula after washing and drying it.
  2. Soften the stale bread in water and then squeeze it out well.
  3. In a bowl, combine the chopped arugula with the softened bread, ricotta, and grated Parmesan.
  4. Add the egg, a pinch of salt and pepper, and the finely chopped garlic clove to flavor the mixture.
  5. Mix everything well until the mixture is homogeneous. If it’s too soft, add breadcrumbs until the desired consistency is achieved.
  6. Form small meatballs with the mixture and roll them in breadcrumbs.
  7. Heat plenty of extra virgin olive oil in a pan and fry the meatballs until they are golden and crispy on all sides.
  8. Drain them on paper towels to remove excess oil.
