Artichoke Tart

The artichoke tart is a tasty dish that combines the delicacy of artichokes with the crispiness of a brisée or puff pastry base. Here is the Italian recipe for an artichoke tart:

Ingredients

For the base:

  • 250 g of type 00 flour
  • 125 g of cold butter
  • 1 egg
  • 1 pinch of salt

For the filling:

  • 6 artichokes
  • 1 lemon (juice)
  • 2 cloves of garlic
  • Parsley to taste
  • 100 g of pancetta or guanciale (optional)
  • 4 eggs
  • 100 ml of fresh cream
  • 100 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by preparing the brisée dough. On a work surface, make a well with the flour and add the cold butter, chopped into pieces, the egg, and a pinch of salt in the center. Quickly work the ingredients until you have a smooth mixture, form a ball, wrap it in plastic wrap and let it rest in the refrigerator for about 30 minutes.

  2. Meanwhile, clean the artichokes by removing the hardest outer leaves, the tips, and the hairy inner part. Cut them into wedges and put them in water acidulated with lemon juice to prevent them from blackening.

  3. In a pan, sauté the garlic with a drizzle of extra virgin olive oil. If you have chosen to use pancetta or guanciale, add it at this point so that it releases its flavor.

  4. Drain the artichokes from the water and add them to the pan, letting them sauté. Add a bit of water, cover with a lid, and let cook until they are soft. Season with salt, pepper, and add the chopped parsley.

  5. Preheat the oven to 180 °C.

  6. Roll out the brisée dough and use it to line a previously buttered and floured tart mold. Prick the bottom with the tines of a fork.

  7. In a separate bowl, whisk the eggs with the cream, Parmesan, salt, and pepper. Add the cooked artichokes and mix.

  8. Pour the artichoke and egg mixture onto the base of the tart and level it.

  9. Bake the tart for about 40 minutes or until golden brown.

Once cooked, let the artichoke tart cool down a bit before serving. It’s excellent both warm and at room temperature.

Curiosity

In some variations of the recipe, mint can also be added to the aromatic herbs for an even fresher, spring-like flavor. The artichoke tart is a versatile dish that can be enriched at will with other ingredients such as various types of cheeses or diced cooked ham.
