  2. In a wide pan, sauté the finely chopped onion with a drizzle of extra virgin olive oil. Add the thinly sliced artichokes and let them sauté for a few minutes.

  3. Toast the rice with the artichokes until it becomes translucent, then deglaze with a bit of white wine and let the alcohol evaporate.

  4. Add hot vegetable broth little by little, continuing to stir the risotto and maintaining a constant temperature.

  5. Continue to cook for approximately 15-18 minutes, adding broth whenever the rice tends to dry out, and taste to check the doneness.

  6. Once the rice is al dente, cream the risotto with a knob of butter and grated Parmesan cheese, seasoning with salt and pepper to taste.

  7. If you wish, you can add some chopped parsley for an extra touch of freshness.

  8. Let the risotto rest for a minute before serving it nice and hot.
