Artichoke Flan

The artichoke flan is a sophisticated and flavorful dish. Here is the recipe:

Ingredients

  • 8 artichokes
  • Juice of 1 lemon
  • 2 eggs
  • 100 g grated Parmesan cheese
  • 2 tablespoons of breadcrumbs (plus more for breading)
  • 1 clove of garlic
  • Chopped parsley to taste
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Butter for greasing the molds

Preparation

  1. Clean the artichokes by removing the toughest outer leaves, the tips, and the stem ends. Cut them in half, remove the inner “beard” and immerse them in water acidulated with lemon juice to prevent them from blackening.

  2. Cook the artichokes in boiling salted water with a bit of lemon juice for about 10-15 minutes or until they are tender. Then drain them and cut them into thin wedges.

  3. Sauté the chopped garlic with extra virgin olive oil in a pan, add the artichokes and let them flavor for a few minutes. Remove the garlic and let cool.

  4. In a bowl, whisk the eggs with the Parmesan, breadcrumbs, salt, pepper, and chopped parsley to create a mixture.

  5. Add the artichokes to the egg mixture and mix well.

  6. Grease the baking molds with butter and sprinkle them with breadcrumbs.

  7. Fill the molds with the artichoke mixture, pressing it down lightly.

  8. Bake in a preheated oven at 180 °C for about 20 minutes or until golden.

Unmold the flans and serve them hot as an appetizer or a light second course. These flans can also be enriched with additions such as diced pancetta or mozzarella for an even more delicious result. Enjoy your meal!
