Arancini with truffle cream

Arancini are a Sicilian delicacy, delicious rice balls filled and breaded that are then fried. The version with truffle cream is a luxurious and incredibly flavorful variation. Here’s the recipe to prepare Arancini with truffle cream:

Ingredients

  • 300 g of risotto rice (such as Arborio or Carnaroli)
  • 1 liter of vegetable broth
  • 50 g of butter
  • 50 g of grated Parmesan cheese
  • 1 egg
  • Fine salt, to taste
  • 200 g of mozzarella, diced
  • 100 g of truffle cream
  • 200 g of flour
  • 2 eggs, beaten
  • 300 g of breadcrumbs
  • Seed oil, for frying

Preparation

  1. Prepare a basic risotto: bring the vegetable broth to a boil in a pot. In another pot over medium heat, toast the dry rice until it becomes translucent. Start adding the broth one ladle at a time, waiting for the rice to absorb the broth before adding the next one. In cooking, the amount of broth may vary, so adjust accordingly.

  2. When the rice is cooked but still al dente, remove from the heat and add the butter and grated Parmesan cheese. Mix well to combine and let the risotto cool down.

  3. Once the risotto has cooled, add the egg and mix until combined. If necessary, adjust for salt.

  4. Take a small amount of cooked rice and flatten it on the palm of your hand. In the center, place a teaspoon of truffle cream and some mozzarella cubes.

  5. Close the filling with the rice, then shape the arancino into the typical round or pear shape, making sure that mozzarella and truffle cream are well sealed inside.

  6. Bread the arancini: first coat them in flour, then in the beaten eggs, and finally in breadcrumbs, making sure the coating adheres well.

  7. In a pot, heat a generous amount of seed oil. Fry a few arancini at a time, until they turn golden on all sides. Drain them on paper towels to remove excess oil.

Arancini are traditionally associated with the feast of Saint Lucia, celebrated on December 13th, when they are eaten without meat in memory of the arrival of a ship loaded with grain during a time of famine.
